#11: We run and cook desserts today!
Nowadays, we start off our day by running at ECP and then to Geylang for some groceries shopping and back to cook. We thought we wanna just cook/try something simple and why not desserts right? Turns out that Irman’s father loves bubur kacang hijau dengan durian.
Yes the featured image doesn’t do justice but let me tell you it taste so heavenly okay! Enough sweetness, thick consistency and juicy durians to top it off!
Well, why durians? Hmmm. Durian is known as The King Of Fruits! I can understand why. It is truly a unique fruit which either you love or totally loathe! And this fruit goes very well with the bubur kacang hijau. It is weird to ‘cook’ fruits but definitely not something you wanna give it a miss to try.
Green Bean Sweet Dessert with Durian
1 cup green beans
8 cups water
meaty durian (can add plenty if you want)
50gm gula melaka (palm sugar)
1/4 cup granulated sugar, or to taste
pinch of salt
100ml thick coconut milk
2 pandan leaves (can have more if you like it to be more fragrance)
Wash green beans in several changes of water. Place in a pot with 8 cups water. Let it come to a boil, then simmer for 30 minutes or until beans are tender. Add in pandan leaves, both sugars and salt to taste. Simmer until sugar are completely dissolved. If consistency is too thick, add 1/4 cup, or more, of water. Add in durian flesh, let it simmer for 2-3 minutes, add in thick coconut milk. Let it come to a simmer, turn off heat. Either eat it warm or chilled.
